Cocoa Extender - January 2010

50% Cocoa Replacer using D. D. Williamson Powdered Caramel Color # 643

Depending upon the price of your cocoa, there is an opportunity for cost savings by replacing 50% of the cocoa in your formula with a cocoa replacer containing flour, D. D. Williamson Powdered Caramel Color # 643, and a chocolate flavor.

The formula is as follows:

  Cocoa 50.0%
  Flour 26.1
  Milk, powder 15
  DDW # 643 7.5
  Chocolate Flavor 1.4
    —–
    100.0%

We have received quotes for 100 pounds of each ingredient as follows:

Cocoa, Natural process, 10-12% Fat $200.00
  Flour, All-purpose <12% Protein $ 13.50
  Milk, powder $127.50
  DDW # 643 $134.00
  Chocolate Flavor $1,000.00

This summary table shows the price for a 100 pound of 50% replacement of:

  Cocoa $200.00 x .500 = $100.00
  Flour $ 13.50 x .261 = $3.52
  Milk, powder $127.50 x .015 = $19.13
  DDW # 643 $134.00 x .075 = $10.05
  Choc. Flavor $1,000.00 x .014 = $14.00
            —–
            $146.70

Compared to 100 pounds cocoa @ $200.00, this is a potential saving of $53.30 or 27%.
