We know some folks who might get queasy at the thought of tossing cheese into their cookies. . . But if variety is the splice of life, then ricotta is the cheese of cookies! Trust us, you’ll swoon for these cinnamon swirlies!

| 1 tsp vanilla |

| 2 c flour 289 g flour |

| 1.5 g baking soda |

1/2 tsp baking soda |
| 1/2 tsp salt |

1.7 g salt |
| 1/2 tsp cinnamon |

1/2 tsp D.D. Williamson
Caramel Color Powder |

0.5 g D.D. Williamson
Caramel Color Powder |

Directions:
- Blend margarine and ricotta cheese.
- Add vanilla, sugar, and egg to margarine and cheese.
- Stir in the dry ingredients.
- Bake on a greased cookie sheet at 350F for about 10 minutes.
- Eat and enjoy!
Tips:
- To create a cinnamon swirl effect, combine the dry ingredients except for the cinnamon and D.D. Williamson Caramel Color Powder. Then stir in the cinnamon and D.D. Williamson Caramel Color Powder just until a swirl effect is created.
- To increase the white/dark contrast, add a little more caramel powder.
- Butter can be used instead of margarine.
