Cousin Kelly’s Oatmeal Scotchies
Nothing goes together as well as Cousin Kelly’s Oatmeal Scotchies and a spot of tea. Their taste is to die for!

| 1/4 tsp salt |
1 g salt |
| 1/4 tsp cinnamon |
0.5 g cinnamon |

| 1/2 stick butter, margarine |
|
57 g butter, margarine |
| 6 Tbsp sugar |
72 g sugar |
| 6 Tbsp brown sugar |
82 g brown sugar |
| 1 large egg |
54 g egg |
| 1 tsp vanilla |
2.5 g vanilla |

Part 3 |
|
1 1/2 cup oats,
quick-cooking or old-fashioned |
|
134 g oats,
quick-cooking or old-fashioned |
| 5/6 c butterscotch chips |
147 g butterscotch chips |

Directions:
- Preheat oven to 375°F.
- Mix Part 1 and set aside.
- Beat Part 2 together in a mixing bowl.
- Gradually add Part 1 to Part 2.
- Stir in Part 3.
- Bake on ungreased cookie sheet for 7-8 minutes (for chewy cookies) or 9-10 minutes (for crisp cookies).
- Cool on baking sheet for 2 minutes before removing to a wire rack.
- Eat and enjoy!
Tips:
- Makes about 2 dozen.
- Feel free to jazz up the cookies by adding some coconut or your favorite nuts.
- Another variety would be to use grated orange peel instead of vanilla.
