Williamson’s Caramel Color No. 535 is a spirits-type color made from corn syrup, able to withstand high proofs, and has a Reddish-Brown cast that is especially pleasing in alcoholic beverages. When used in creme liqueur applications the caramel should be blended with the alcohol prior to homogenization.
