Williamson’s Caramel Color No. 525 is a spirits-type color made from either cane or beet sugar, able to withstand high proofs; and has a reddish-brown cast that is especially pleasing in alcoholic beverages. When used in creme liqueur applications the caramel should be blended with the alcohol prior to homogenization.
