Caramel Coloring 108 is a Class IV Caramel

D.D. Williamson’s Caramel Coloring No. 108 is an acid proof type used in root beer, cherry cola and grape beverages. It is also used in alcoholic beverages such as rum, brandy,wine and vermouth. While all caramels are “brown”, No. 108 is of particular value for those food and beverage products where reddish brown shades are desirable.

  1. Color Intensity Increases and pH decreases with age. Liquid Caramel Color viscosity also increases with age; however, the product typically will remain fluid for a minimum of 2 years under normal storage conditions in unopened containers.
  2. Absorbance of 0.1% w/v solution @ 610 NM through a 1cm square cell on Beckman DBG Spectrophotometer x 1000.
  3. Maximum Allowed: 1,300ppm as listed in the monograph for caramel color found in the Food Chemicals Codex.

Packed in bulk totes, 55 gallon plastic drums, 5 gallon pails and 4 X 1 gallon case packs.
