50% Cocoa Replacer using D. D. Williamson Caramel Color # 643 Powder

Depending upon the price of your cocoa, there is an opportunity for cost savings by replacing 50% in your formula with a cocoa replacer containing flour, D. D. Williamson Caramel Color powder, milk powder, and a chocolate flavor.

The formula is as follows:

  Cocoa 50.0%
  Flour 26.1%
  Milk, Powder 15.0%
  DDW # 643 7.5%
  Chocolate Flavor 1.4%

We received quotes for 100 pounds of each ingredient as follows:

  Cocoa, Natural process, 10-12% Fat $200
  Flour, Soft wheat $13
  Milk, Powder $150
  DDW # 643 $134
  Chocolate Flavor $1,000

This would give a price for 100 pound of 50% replacement of:

  Cocoa $200 x .500 = $100.00
  Flour $13 x .261 = $3.39
  Milk, Powder $150 x .15 = $22.50
  DDW # 643 $134 x .075 = $10.05
  Choc. Flavor $1,000 x .014 = $14.00
